Notes: To change up the flavor add some almond extract, lemon/orange zest, or use buttermilk.

A lot of my recipes call for cardamom. It is a truly divine and unique flavoring that I enjoy in so many different things. Cardamom can best be described as earthy, minty, and just a hint of sweet. You can leave it out, but I highly recommend adding it to these waffles and to your spice cabinet.

In a couple of separate bowls mix up the wet ingredients. This includes eggs, oil, milk, and vanilla.
Eggs
To get the eggs quickly to room temperature, just place them into a bowl with very hot water and let them sit for about 5 or so minutes. I then use that same bowl to crack them into. Never crack the eggs right into your recipe in case of shells or maybe a bad egg.

The eggs need to be separated for this recipe. Do this any way you like. I crack the shell in half and gently pour the yolk from one side to the other until the whites are in the bowl. Save the yolks to mix with the milk and oil.
Next, beat those egg whites until stiff peaks form. We use a handheld egg beater, but you could use a stand mixer or electric beaters, even a fork if you want a workout. This is a crucial step for the waffle batter as the beaten egg whites give an airy and fluffy texture. Set aside next to the dry ingredients

Coconut Oil
Coconut oil is a great choice for almost all of our baking here at Inspired Homemaker. It has a wonderful flavor (without being overpowering) and texture. It is actually solid at room temperature. I find this adds so much dimension and structure to baked goods. Plus it is good for you. It’s also good for your skin and hair.

Coconut oil is a great addition to Belgian waffles. It adds a rich, tropical flavor and makes the waffles extra crispy. To use coconut oil in Belgian waffles, simply substitute it for the butter or oil in the recipe. You can also use it to make a delicious coconut whipped cream to top the waffles with.
Add some to a microwave-safe measuring cup (I love my Pyrex collection) and melt it. It shouldn’t take more than 1-2 minutes to melt. You don’t want it hot, just melted.
Milk
Measure out your milk in a glass microwave-safe container like these Pyrex dishes. You will want to warm it up to just past room temperature. This is for a couple of reasons. First, adding cold milk will solidify the coconut oil. Secondly, using cold ingredients in baking inhibits the interactions between ingredients. The baking powder will react wonderfully with warm liquid. This interaction will give these delicious Belgian waffles that fluffy texture you want without having to use yeast.

Vanilla
Mix together your melted coconut oil, milk, and the two egg yolks from earlier. Whisk them until fully blended. Now add your vanilla. I have been making homemade vanilla over the last year and it has turned out great. Two teaspoons in this recipe, maybe three if I’m feeling fancy.

3. Fold in the egg whites very carefully. Put down the whisk and opt for a rubber spatula instead. Scrape the sides and gently fold the egg whites into the batter. Be careful not to use a heavy hand. Those egg whites are filled with air pockets. Fold them in until they are mostly incorporated. A bit lumpy with these is OK!

To cook these delicious Belgian waffles without yeast you will need a waffle maker. All waffle makers are not equal. The more American version style waffle makers make smaller less thick waffles. This recipe uses a Belgian waffle maker. It creates those deep pockets we all love to fill with syrup and jams. This one is just like mine.

You don’t need to break the bank either. My mom gifted this one to us over 10 years ago and it is just perfect. This one is just like mine.

1. Get the waffle maker piping hot and use a cooking spray to coat both the top and the bottom. We use Trader Joe’s coconut oil spray and have never had one stick.
2. Pour in the batter using a ladle, and fill the bottom chamber with the waffle batter. Shut the lid and flip it over. Read and follow the directions on your waffle machine for operating instructions.

3. Let the waffle cook until the indicator light goes on (or however your machine works).

4. Use a pair of tongs to remove the waffle and set it on a large cooking sheet.
5. Keep warm and enjoy!

- Keep the cooking sheet with the waffles in the oven turned to 250 degrees with the door slightly ajar.

Delicious Belgian Waffles: Without Yeast

Big, fluffy, airy and crisp. These waffles are full of satisfying flavor and texture.
Ingredients
- 3 cups of all purpose flour
- 4 teaspoons of baking powder
- 1/2-1 teaspoon of cardamom
- 1 teaspoon of salt
- 1/4 cup of granulated sugar
- 2 eggs at room temperature, divided
- 3/4 cup coconut oil, melted
- 2 1/2 cups milk
- 2 teaspoons vanilla
Instructions
- Measure out your dry ingredients (Flour, baking powder, cardamom, salt and sugar) into a bowl and whisk together to blend. Set aside.
- Place your eggs in a bowl of hot water to bring to room temperature while you ready the wet ingredients.
- Measure out the coconut oil into a glass measuring cup and melt in the microwave. Heat until melted (1-2 minutes). Measure out the milk and warm it to a little warmer than room temperature. Mix the oil and milk together.
- Separate the eggs and add the yolks to the the oil and milk. Whisk vigorously to combine. Make sure the milk isn't too hot so you don't cook the eggs.
- In a separate bowl beat the egg whites until stiff peaks form. Set aside.
- Pour the milk/oil/yolk mixture into the dry ingredients and mix well about one minute. Add vanilla. You want to see air bubbles forming. This is the reaction of the baking powder with the warm liquid.
- Gently fold in the egg whites being careful not deflate the air out. A rubber spatula works great!
- Heat up your waffle maker and spray with non-stick cooking spray. Follow the instructions for your waffle maker.
- Ladle in the waffle batter and cook according to the manufacturer's directions.
- Keep waffles warm in the oven (see above in the post for tips!)
