This combination is heavenly on potatoes – the only other seasonings needed are salt and pepper.

Most kinds of potatoes will work great for this perfect side dish. Some potatoes have thinner tastier potato skins than others like yellow potatoes or new baby potatoes. Others like russet potatoes and sweet potatoes have thicker skin that I usually peel. Leaving the skin on adds that bit of crispness to the edges that is so delightful. 

Here are some suggestions for perfect roast potatoes:

  • New potatoes
  • Baby potatoes or fingerlings
  • Yukon gold potatoes
  • Red potatoes

All of these potatoes are washed, dried, and cut into “coins” or circles. The potatoes can also be cut into strips to make french fries!

If using russet or sweet potatoes, you can put them directly onto a parchment paper-lined baking sheet and drizzle with the rosemary butter and seasonings. These types of potatoes can stick to the pan so roast them directly. 

Herbs And Infusing Butter With Different Flavors

I love cooking with fresh herbs. They bring flavor, color, and brightness to any dish. I love to grow herbs in the summer months and then I dehydrate them to use for the winter. The woody stemmed varieties like thyme, rosemary, and lavender make great potted plants inside over the winter. There are fresh herbs packaged in the produce section of the grocery store for your convenience.

With fresh herbs, take the whole sprig and infuse the butter with it by heating the two together. Infused butter is a favorite sauce – simple and delicious.

  • Sprig of rosemary – it is sweet and earthy
  • Sprig of thyme – it is bright and slightly citrus
  • Sprig of lavender – earthy with floral notes
  • Sprig of sage – earthy & slightly minty and mucky
  • Piece of fresh ginger, peeled.  – it tastes exotic and peppery
  • Whole fresh garlic clove – spicy and pungent
  • Lemon juice from a fresh lemon – bright and citrusy

Other infusions (maybe not for this dish but to inspire you…) Cinnamon, cardamom, honey, maple syrup, and nutmeg all enhance the butter flavor.

There are so many seasoning and fat options for these potato wedges or circles that don’t include using oil. Additionally, if using an air fryer you don’t need any fat. Rosemary, butter, salt, and pepper are just right for really flavorful potatoes but they can be easily customized to your taste. Whatever type of potato you decide on, this delicious recipe is easy for any night of the week, even busy weeknights.

These are the ingredients I use to feed 2 adults and 3 children. You can make however many pounds (lbs) of potatoes that you need. This easy recipe can be doubled or tripled. 

  • 1 pound of new potatoes
  • 2-3 tablespoons of salted butter
  • 4 inch sprig of rosemary
  • Sea salt and black pepper to taste

Instructions On How To Make Easy Oven Roasted Potatoes With Rosemary Butter (Oil-Free)

Preheat the oven to 400 degrees F.

1. Begin by washing your potatoes and drying them well with a tea towel or paper towels (for best results of crispness). Slice them into 1/4 inch or so circles or coins.

2. Melt butter in a large cast iron skillet (or oven-safe pan) over medium heat and add the sprig of rosemary. Stir it around making sure it doesn’t burn for a couple of minutes. (You can leave it in the whole time)

3. Increase the temperature to medium-high heat and add in the potatoes. Let them brown a little and then flip – trying to keep them in a single layer if possible. Cook for about 6-8 minutes.

4. Put the pan of potatoes into the hot oven and roast at 400 degrees for 15 minutes, flip them over and roast for an additional 10 minutes. Turn on the broiler for about 5 minutes or until the tips are golden brown.

– Oven method- reheat at 350 degrees on a baking tray until the desired temperature is reached. Usually about 10 minutes.
