Instructions On How To Make Easy And Rustic No-Knead Artisan Dinner Rolls

These rolls require several hours of hands-off time. Meaning you will make the dough and then let it rest for no less than 5 hours. The shaggy dough you create will become airy and moist as the flour is saturated and the yeast has done its job. 

1. In a large bowl mix together the dry ingredients of flour, yeast, cardamom, and salt with a whisk or Danish dough hook until well combined.

2. Add in the lukewarm (or room temperature) water into the flour mixture and stir together making sure all the ingredients are mixed.

3. Cover the dough ball with plastic wrap (or a shower cap like me!) and then with a tea towel to keep it warm and dark.

4. Set the bowl in a place where it will remain undisturbed for 5-18 hours.

5. Generously cover the counter with flour and turn out the dough. It will be a very sticky and very wet dough. This is good.

6. Divide the dough into 12 roughly equal pieces and roll into balls with floured hands. See notes…

7. Put the dough balls onto silicone mats or a piece of parchment paper on a baking sheet and cover. Place dough in a warm place and let it rest for 30 minutes for a final rise while the oven heats up. Sprinkle with flour.

8. Bake in a 450-degree oven for 9-11 minutes. 

9. Transfer the rolls to a cooling rack.

  • Using warm or hot water will work the yeast too quickly, be sure to use cooler water. This is meant to be a long and slow ferment. 
  • A Danish dough hook is an amazing tool that brings the dough together with ease. You can also use a fork, wooden spoon, or spatula. Whatever works for you.
  • It is important to let the dough rest for a long time to build up the glutton. I usually go 5 hours but you can let it rest for up to 18 hours. 
  • Rolling the dough balls – wet dough isn’t easy and these do not need to be perfect. I like to fold them up onto themselves a few times and place them on a cooking sheet.
  • You can easily make a whole loaf of artisan bread by placing the dough into a preheated Dutch oven (or oven-safe pot) and baking at 450 degrees for 20 minutes with the lid and then another 10 without.
  • You can brush the top of the bread rolls with butter or egg wash for a different texture.
  • You can also use a pizza stone for more even heating.
  • For a crispier crust, through a couple of ice cubes in the bottom of the hot oven or use a spray bottle to create steam.
